Chocolate Coconut Ice Cream Shell

Yesterday, while working our way through all the Avengers Movies before Age of Ultron comes to iTunes I was struck with a massive chocolate craving. The kind that consumes your every thought until cured.

I considered making brownies but after a long day with the kids and doing our weekly errands the hour it would have taken seemed daunting.

Standing in front of our pantry feeling defeated, it came to me; we always have semi sweet chocolate chips and coconut oil. In less than five minutes I could make an ice cream shell and create a pretty great Sundae.

It was the perfect chocolate treat to save my night and as always, Winter Soldier did not disappoint. As a bonus we found the gag reel buried in iTunes Extras, which i highly recommend.

So here is my version of the Chocolate Coconut Ice Cream Shell. It can be made using any chocolate you like and stored at room temperature for up to a month.

Chocolate Coconut Ice Cream Shell

Cook Time: 1 minute
Total Time: 3 minutes
  • 1 cup chocolate chips, we like ghiradelli semi sweet
  • 2 tbsp coconut oil
  • a pinch seasalt, optional
  1. Pour chocolate chips into a small microwave safe bowl. Stir in coconut oil and salt.
  2. Microwave on high for 30 seconds, stir, and microwave for another 30 seconds. Stir until chocolate mixture is smooth. If there are still chunks microwave in 10 second increments until melted.
  3. Pour over your favorite ice cream or keep in a jar at room temperature for up to 1 month.
